The Brewery ---
The Brewery at the Longwood stands proud as one of the first images that you will see as you enter the main entrance. The Primary Brew House is located behind storefront glass on the left of our host- stand and is a flurry of activity as our brewer Harley Smith creates his magic and art 3 to 4 times a week. Saturday is tour day with reservations requested for the ever-popular 3:00 pm brewery tour and tasting. Only those patrons 19 or older may participate in the tasting component of the tour.
The brewery was designed by Ladell Brewing Consultants Ltd. and manufactured on Vancouver Island by Specific Mechanical Systems. It is a 10 Hl system that begins outside with a 25 ton silo where we store our Maris Otter 2-row brewing barley. The barley is imported from the original Guinness malt house in Warminster, England and is shipped in 17 ton containers. The barley is augered from the silo to the third floor milling room. Here it is blended with the specialty-roasted barley to give that day's beer its unique colour and flavor. Passing through the floor into a hopper below the crushed barley, called "grist", is ready to hydrate in the mash tun and the start of the maltose "wort" conversion. Once the wort is created it is then boiled for 1½ hours in our electric fired kettle. During this boiling we add the hops for the preservative and flavour component of that day's beer. The hopped wort is then cooled and passed through the floor again down to our fermentation room where the yeast is added and the beer evolves. Several days later the now fermented beer is transferred into one of our 22 secondary fermentation tanks where it stays until it is mature and ready for our patrons to enjoy.
Because we choose not to filter our beer and have it retain its vitamins, minerals and nutrients, we must go through a lengthy and laborious process of gently moving the beer off the settling yeast over a period of weeks so when it is received in your glass it is pristine clear and still holds its nutritional value as a complete carbohydrate. It is this holistic approach to beer manufacturing that sets Longwood Brew Pub head and shoulders above commercial micro-brewed and filtered beers.
